We had a great time at our Tea Workshop on 28 April. Ruth gave a brief introduction to the processes and properties of white, green, light oolong, dark oolong and black teas. We then tasted an example of each of the teas: White Peony (Pai Mu Tan), Dragon Well (Long Jing), Iron Goddess of Mercy (Ti Guan Yin), Wuyi Oolong (Xui Shan) and Keemun Gong Fu Hong Cha. First we smelled the fragrance of the dry leaves, then tasted the brewed teas and smelled the wet leaves in order to experience the full sensation of aroma and flavour.
There was lots of slurping, and lots of surprise and the variety and depth of flavour of the different teas. Everyone had their own favourites and there was lots of discussion and questions.
